Cheesy and yummy without the loaded calories and carbs of a normal pizza – but still tastes AMAZING all the same.
Its SATURDAAAAY and that means one thing – pizza. Crispy pizza covered in a tomato and cheese mess.
If you guys are anything like me then you love pizza. I don’t just mean you like it, I mean life love love love it. Pizza is the thing I will order at any restaurant, it is the first thing that pops into my head when I hear takeaway. It is my one true love.
So I made this. This is no ordinary pizza, it is a healthier version, which is good as it means you can eat twice the amount. Seriously though, this pizza is delicious. You barley notice that the crust is cauliflower and actually you feel even better about eating it because you know it is made from wholesome ingredients.
Cauliflower crust pizza
Yields: One large pizza
- 1 cauliflower (600g)
- 100g ground almonds
- 2 eggs
- herbs or seasoning
- Preheat oven to 180C ( 350F) and line a baking tray with grease proof paper. Remove leaves from cauliflower and cut into chunks – stalk can be used – place in food processor and blitz until finely chopped.
- Place in bowl and cover with clingfilm, then microwave on high for 5-6 minutes until soft. Once cool tip onto a clean tea towel and squeeze out as much water as possible, transfer back to bowl. Stir in almonds, eggs and herbs.
- Transfer onto baking tray and flatten into desired shape. Bake for 17 minutes until golden brown and starting to crisp at the edges.
- Remove from oven and leave to cool a little. Turn up the oven to 220C (420F) and spread pizza sauce over the base. Add toppings and place back in oven for 10-12 minutes.
Notes: The best herbs to use are Italian seasoning and mixed herbs but use whatever takes your fancy.
If you have a pizza tin feel free to use that – it will give you a nicer shape but may take longer to cook.
To create a crust you can make the edges of the pizza thicker when shaping. However if you like it crispier make the edges thinner.

This is good recipe .
You know, what is the hardest part for me ?:) To cut cauliflower. I do not know, maybe I am doing something wrong, but after this my kitchen is covered with cauliflower pieces 🙂 🙂
